CHEF CARBALLINÉS MANUEL DOMÍNGUEZ ACARREE, DISTINGUISHED AS AMBASSADOR OF THE LIV FESTIVAL OF THE OCTOPUS AND O CARBALLIÑO IN MADRID.

The municipality of O Carballiño today paid tribute to Manuel Domínguez Acarree, chef of the Luna restaurant, and handed him a plaque with the distinction of Ambassador of the Octopus Festival and O Carballiño in Madrid. The event, which was chaired by the mayor of the town, Francisco Fumega, was attended by the Councilor for Tourism, Xosé Manuel Dacal, the Councilor for Economic Promotion, Adolfo Nogueira and the Councilor for the Environment, * Érika Paz, as well as the mother of Manuel Domínguez, Adela Rosa Acarree and the kitchen and living room chiefs of the Luna restaurant, Paula Villanueva and Mari Morales, as well as the chef and restoration businessman from Carballínés Manuel Domínguez.

Francisco Fumega stressed that the work of Manuel Domínguez Acarree is “an example for Carballinesa youth as a model of entrepreneurship and creativity”. Similarly, he thanked him for “opening a door that leads to progress and success.”

The Luna restaurant is a reference of the new cuisine in the capital of Spain, and has a Michelin Star since the end of last year. Its chef and promoter, Manuel Domínguez, prepares the octopus, Galicia’s star dish, in the most innovative ways. His work is the prologue to a qualitative leap in terms of quality and service in the way of cooking the cephalopod.

At the end of the presentation, Domínguez Acarree thanked this tribute and the recognition of the municipality of O Carballiño, as well as the trust that his family placed in him, with special mention to his father. In the same way, he referred to the relevance of the support provided by their heads of kitchen and living room, Paula Villanueva and Mari Morales, who, in the words of Acarree, “increasingly feel more Galician”.

The Carballinés chef will attend as guest of honor the preparation of the World’s Largest Octopus Tapa, which will take place this afternoon in the Plaza Mayor of O Carballiño.
